FOOD: How Danes do an egg sandwich!

Is this an open sandwich or is a sandwich two open sandwiches on top of each other? It doesn’t matter. This is lunch the Danish way, lightly buttered rye bread topped with rocket, slices of hardboiled egg, cherry tomatoes, a spoonful of yogurt, a teaspoonful of avruga and a sprinkling of chives. True, unlike the ‘closed’ sandwich, this requires cutlery and is less suitable for transport over long distances. But it’s delicious. And compared to the white loaf mayonnaise fest, it’s quite healthy!
